Lolly’s Blueberry Lemon Loaf
This is not my recipe but it absolutely needs to be shared. My best friend Lolly’s blueberry lemon loaf recipe is one of the best things you’ll ever eat… bonus points if you turn it into french toast like in this picture!
Ingredients:
1 1/2 cups of all purpose flour
1 tsp baking powder
1 tsp salt
1 cup granulated sugar
1/3 cup unsalted butter, melted
2 eggs
1/2 tsp vanilla extract
2 tbsp lemon juice
1/2 cup of milk
1 cup blueberries
2 tsp lemon zest
Directions:
Preheat oven to 350ª
Melt 1/3 cup of butter first so it has time to cool down
Allow milk and eggs to come to room temp to prevent the butter hardening
In a large mixing bowl, combine all wet ingredients (milk, eggs, melted butter, vanilla, and lemon juice) - whisk well
In a separate mixing bowl, combine all dry ingredients (flour, sugar, baking powder, and salt) - then mix
Gradually add the dry mixture into the wet in little parts at a time, whisk thoroughly until all of the dry and wet mixtures are combined
Coat blueberries in about 1 tbsp of flour, this prevents them from sinking
Add lemon zest and coated blueberries and fold into the batter
Pour in a loaf pan and bake at 350ª for about 1 hour, adding fresh blueberries on top halfway through
Bake for about an hour, checking to see if it is done by using a toothpick (if you poke it w/ a toothpick and it comes out clean, its ready! If not, pop it in for a few more min and keep checking)
To make a simple glaze, I combined powdered sugar and lemon juice until it has a good glaze consistency and pour over top
Eat it how it is or turn the leftovers into the best french toast you’'ll ever have!
