Chicken Milanese

Chicken Milanese is my favorite dish to make when I want to make something relatively easy that still feels elegant. Shoutout to my mom for being the reason I’m obsessed with this dish.

Ingredients:

  • Chicken breast (1 per person)

  • Eggs, for egg wash coating (1 large egg per chicken breast)

  • Flour

  • Italian seasoned breadcrumbs

  • Arugula

  • Tomatoes

  • Lemon juice

  • Parmesan

  • Optional: raw mushroom and radish slices

Directions:

  • Slice chicken breasts in half or butterfly

  • Cover w Saran Wrap and pound super thin: if you think it’s too thin, it’s not. Keep goin’

  • In 3 shallow bowls, put flour in one, beaten eggs in another, and breadcrumbs in the last

  • Season flour with salt, pepper, garlic powder, onion powder, Italian seasoning, whatever you want honestly… you choose

  • Press chicken into flour until fully coated then shake off excess

  • Dip chicken into beaten eggs and let excess drip off

  • Finally, dip into breadcrumbs and press in to stick

  • Add cutlets to a hot pan with oil - breading will stick to pan if not hot enough!

  • Cook 5-7 min each side until golden brown and crispy

  • Let rest on paper towels to remove excess oil and top with flakey sea salt

  • Top with salad: arugula, tomatoes, parm, radish, mushroom, lemon juice, EVOO, and salt

  • Serve with a simple orzo w/ lemon, parm, S&P

  • (Top with a sunny side up egg if you really wanna level up!)
